BROOKINGS, S.D. — Wyshbone Market LLC is spreading its wings — “bringing the taste of South Dakota to the world,” company leaders say.
Dianne Coolbaugh is the manager of Wyshbone Market turkey product stores in Huron, S.D., and Brookings, S.D. She was present Oct. 1 when business was brisk for the opening day of the company’s new Brookings store.
The first Wyshbone Market store opened in Huron in April 2012. The entity is a retail outlet owned by Dakota Provisions Inc., a turkey processing plant built in 2006 near Huron. Dakota Provisions employs about 1,000 workers and is owned by 43 Hutterite colonies. Dakota Provisions kills about 20,000 turkeys from the colonies every day. The live birds weigh as much as 45 pounds each.
